The idea

Most restaurants fail because they do too much.

Eight years ago we opened ZANOOBA on one stubborn belief: keep it simple, keep it sustainable. Fewer dishes. Less waste. Calmer service. A team treated well enough to stay.

We were told it could never work here. A leisure town, guests on holiday — nobody plans dinner a day ahead, let alone by one o’clock. People laughed. They told us we would fail.

They were wrong, for a simple reason: proper cooking needs time. Ask a guest to decide early and you can cook the way food is meant to be cooked — slow, unhurried, tasting of someone’s kitchen at home. That isn’t a rule we impose on guests. It’s a trade, and they take it gladly, because their side of it is worth more than the spontaneity they gave up.

That trade is the engine. A short menu makes the wait worth it; cooking only for known guests removes the guesswork that fills every other kitchen’s bins. Sustainability was never the expensive option — built in from day one, it turned out to be the cheapest way to run a kitchen, and the reason we came through a pandemic and kept growing.

The Off-Menu Circle is where we hand that over. Not as advice from the outside, but as the real systems, from one working operator to another.
